Pistachio Butter Stuffed Dates
These pistachio butter stuffed, dark chocolate dipped Medjool dates are the perfect healthy and simple treat to satisfy your sweet cravings.
Ingredients:
- 6 pitted Medjool dates (we prefer organic)
- Pistachio butter
- 1/4 cup dark or semi sweet chocolate
- Crushed pistachios
Directions
- In a small saucepan, simmer water over medium-low heat
- Place a bowl over the saucepan, add the dark chocolate and let simmer on low until the chocolate melts
- Insert a cut into the middle of the Medjool dates and add a dollop of pistachio butter in each date
- Once the chocolate has melted, dip the dates until coated all around
- Sprinkle the chocolate-dipped dates with crushed pistachios
- Transfer the dates onto a plate and place them in the fridge for at least 30 minutes to let the chocolate coating cool and harden
- Take them out and enjoy!
