Pistachio Butter Stuffed Dates

These pistachio butter stuffed, dark chocolate dipped Medjool dates are the perfect healthy and simple treat to satisfy your sweet cravings.


  • 6 pitted Medjool dates (we prefer organic)
  • Pistachio butter
  • 1/4 cup dark or semi sweet chocolate 
  • Crushed pistachios


  1. In a small saucepan, simmer water over medium-low heat
  2. Place a bowl over the saucepan, add the dark chocolate and let simmer on low until the chocolate melts
  3. Insert a cut into the middle of the Medjool dates and add a dollop of pistachio butter in each date
  4. Once the chocolate has melted, dip the dates until coated all around
  5. Sprinkle the chocolate-dipped dates with crushed pistachios
  6. Transfer the dates onto a plate and place them in the fridge for at least 30 minutes to let the chocolate coating cool and harden
  7. Take them out and enjoy!
